Packaged wheat grains suitable for Ukrainian Christmas kutia. 1 cup bag. (Click on Cooking Instructions tab below to see 3 different recipes for making kutia).

Kutia (Wheat) 1

3 quarts water
2 cups high-grade wheat
1 cup poppy seed
2/3 cup sugar
1/3 cup honey
1/2 cup hot water
1/2 cup chopped pecans
Nuts, apple or cherries (optional)

Dry wheat in a slow oven at 250 F for 1 hour, stirring occasionally. Wash and soak overnight. 

Bring wheat to a boil, then simmer for 3 to 4 hours, until kernels burst open and white appears. 

Scald poppy seed and simmer for 3 to 5 minutes. Drain well in cheese cloth and grind twice using the finest blade of the food chopper. Set aside.

Dissolve honey and sugar in hot water; set aside. Before the meal, add sweetened mixture, ground poppy seed and nuts to the cooled wheat. Seasoning the wheat mixture with caramal sauce is a tasty option.

Kutia (Wheat) 2

2 cups wheat
3 qts. water
1 cup poppy seed
2/3 cup sugar
1/3 cup honey, dissolved in 3/4 cup hot water
1/2 cup chopped walnuts, almonds or pecans

Dry wheat in 250 F oven for 1 hour, stir occasionally. Wash, soak in cold water overnight. Next morning, bring the wheat to a boiling point. Simmer for 3 to 4 hours, until the kernels burst open. 

Scald the poppy seed, and simmer 3 to 5 minutes. Drain, grind twice using the finest blade on the food chopper. Set aside. Combine honey and sugar in hot water. Set aside. Before serving, add sweetened mixture, poppy seed and nuts to cooled, boiled wheat.

Kutia (Wheat) 3

2 cups wheat
1/2 cup sugar
1/2 cup honey
1/2 cup chopped nuts
1/2 cup poppy seed

Pick out foreign grains from the wheat. Rinse well and put the wheat in a pan and dry in the oven for 1 hour at 225 F. Stir occasionally. Sprinkle with hot water. Put in a sturdy sack and pound it with a rolling pin to loosen the outer layer of bran. Wash the wheat thoroughly by allowing the bran to rise to the top and remove it. Keep rinsing until the wheat is free from bran. 

Soak wheat overnight in 7 cups of whater. Cook the wheat in the same water in which it soaked. Stir frequently and add more water. Cook about 6 to 7 hours. About the last 2 hours it will thicken, so stir often and cook on very low heat.

Wash poppy seed, pouring boiling water over it, rising off until it looks clean. Put in on the stove on simmer for about 10 minutes and keep the lid on. Grind the poppy seed in the blender or use the finest blade on the food chopper; or you can leave the poppy seed whole. Mix together cooked wheat, poppy seed, nuts, sugar and honey, and serve.
